Molten Green Tea Chocolate Cookies

Agonising over what baked goodies to gift during the festive season? Want something special and yummy? These chewy molten green tea chocolate cookies could just be the solution you are looking for!

You may ask, do chocolate and green tea go well together? The answer is, YES! The earthy flavours of green tea and cocoa complement each other, and imagine the surprise when people bite into the cookie and see not chocolate, but green tea oozing out!

The main challenge we faced while creating this recipe was ensuring there’s enough of that lovely gooey spread within the cookie to flow out when you bite into it, and we found the answer – freeze the spread in a silicon mould rather than leaving it on a baking tray! It ensures that the frozen balls of lava are of the same size, and it’ll be easier to wrap the cookie dough around it for baking.

Ingredients and important tips

  • Green Tea Almond Spread – The magical gooey lava that oozes out when you break open the cookie. When freezing the spread, we recommend a silicon mold so that it will stay round and tall rather than flat and short. This will help in creating the gooey lava effect when you bake the cookie!
  • Brown sugar – Brown sugar has a deep, caramel-like flavour compared to white sugar, and works very well in chocolate cakes and cookies. If you can’t find brown sugar, you can use the same amount of white sugar as well.
  • Butter, egg, flour – The must-haves in cookies.
  • Baking soda – Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. As baking powder is comprised of a number of ingredients, using it instead of baking soda will affect the taste and texture of your cookie.
  • Corn starch – This makes the cookies thicker and more chewy!
  • Cocoa powder – Just because chocolate tart pairs better with green tea

Green tea spread recipes

The Feliz Green Tea Almond Spread spread is rich and creamy in nature, with a slight bitter overtone from the green tea and balanced by a little sweetness. There’re plenty of ways to use it! You can use it in baked goods as we have done in this recipe and also in Green Tea Milk Spread Chocolate Tarts.

You can also have it on its own, as a spread on bread, waffles, toast, pancakes, etc.

How to make chewy green tea chocolate cookies

Let’s start making these yummy treats!

  1. Scoop 1 tsp of Feliz Green Tea Almond Spread into a silicon mould. Repeat this step 10 times and freeze for at least an hour.
  2. Preheat oven at 180C.
  3. Beat butter, brown sugar and egg in a standing mixing bowl for a minute till smooth.
  4. Add flour, baking soda, corn starch and cocoa powder and beat till well-combined.
  5. Take an ice cream scoop of cookie dough and wrap around the frozen Green Tea Almond Spread. Ensure that the green tea spread is covered entirely. Repeat until cookie dough is used up.
  6. Bake for 10mins.

  • 10 tsp Feliz Green Tea Almond Spread balls, frozen
  • 115g butter, room temperature
  • 90g brown sugar
  • 1 egg
  • 140g flour
  • 1/2 tsp baking soda
  • 1 tsp corn starch
  • 40g cocoa powder

Instructions

Let’s start making these yummy treats!
